Weekend Happenings

Mondays are always a little rough. But they’re especially rough after a 4 day weekend (thanks Rodeo Break!!). Sofia and I spent the day at home Thursday. Everyone in our house has been kind of sick, so I thought we would take the day to recoup the best we could before the actual weekend. We had breakfast in bed, watched some Sesame Street, played with bubbles, and took a stroll around the neighborhood.




On Friday, we hit up the children’s museum. I have been wanting to take Sofia to the children’s museum ever since my class went on a field trip there in October. Girlfriend enjoyed it just as much as I thought she would! There were all her favorites: books, balls, blocks, puzzles, pretend food, bubbles, chalk, markers, paint, slides, and tunnels. I had equally as much fun watching her enjoy herself so much. Friday night, Erik surprised us and took us out on a family date. We went to a really great Asian restaurant just down the street from our house. After we put Sofia to bed, Erik and I scoured Netflix for a movie to watch (actually it’s more like Erik surfing through Netflix and me saying no to every option). We ended up agreeing on a movie called Dope, and I was shocked by just how much I enjoyed it. If you’ve never heard of it (I hadn’t) I would suggest watching it. FIVE STARS from a harsh critic right here. 



Saturday morning, we picked up some Starbucks for breakfast and headed to the park. The weather has been absolutely gorgeous and Sofia just loves being ‘side! When we got home from the park, it was nap time (for her, not us, unfortunately). Erik and I had big plans. CLEAN THE HOUSE. I’m truly not a fan of the word “adulting” but I felt like we were totally adulting Saturday afternoon. That night, we decided to reward ourselves for all our hard work with some surf & turf on the patio. It was perfection.



Sunday morning Sofia and I went grocery shopping (which was an absolute disaster, but we lived to tell the tale!). Basically she decided she hated HAAAAAATED sitting in the shopping cart and needed a ball from one of those obnoxious ball displays. So now envision me holding Sofia holding a huge bouncy ball pushing a full shopping cart. Needless to say, when I put her down for her nap yesterday afternoon, I said, “eff folding laundry! I’m laying out by the pool!!” After her nap, we hit up the outdoor mall and perused around (and bought Sofia some cute new spring ensembles). We ended our night watching part of the Oscars (only made it about halfway, because boredom, honestly). Sofia made it about a tenth of the way through and it is so hilarious watching her watch a show that involve applause because little miss loves copying anything and everything.

It took a little work convincing Erik that Babymoons were a real thing, but I finally got him on board! After he spent an afternoon at a local resort for work, he decided that's where our babymoon would take place, and I wasn't opposed. If I've said it once, I've said it a million times, I love a staycation.


I also love (not) the awkward photos Erik takes of me. He managed to make me look like a giant in this picture. I'm actually standing on a wall, which you would never know since he cut off my feet. ANYWHO. Moving along..



I Googled "Can pregnant women go on waterslides?" And the answer that summed it up quite perfectly was, "If it's fun, you probably can't do it while pregnant." So I didn't venture down the slide myself, but I got some pretty good shots of Erik. 

We had great views...


Great food...




And overall a fabulous time! 








Baby Shower Shenanigans

 This Saturday my mom hosted a beautiful baby shower at her house for Baby Anderson & me. It was filled with family, friends, great food, and fun. Our future bambino is definitely already loved so much and I think she knows it. I woke up Saturday morning to her having a dance fest in my belly... she was ready to party!

We played "Guess Who Brought the Onesie" which proved to be a lot harder than I expected. Either I'm not a very good guesser or everyone is way too creative. Or a combination of the two.



Baby A now has 100x more clothes than Erik and I combined, I swear. 
And is 100x more stylish. 



Sarah's younger sister is an amazing baker, and made these gorgeous (and equally delicious!) cupcakes for the shower.



Then everyone had to sculpt a baby out of bubble gum. And contrary to how I imagined this going down, the gum was not supposed to be chewed prior to sculpting.

After the shower was all said and done, and the boys got back from golfing, we ended the day with some BBQ & board games.

Red, White & Blue

Memorial Day weekend holds a special place in my heart because it is the weekend (5 years ago!) Erik and I met in San Diego. You can read all about it here.  I was 20 1/2 years old and distinctly remember asking Erik if he would buy me beer. When he asked if it was because I had no money, I snapped back with, "NO! I'm twenty and a half!" 
Now we're engaged and expecting our first child.

And what better way to celebrate this glorious holiday than with some red, white and blue food & drinks?! I'm taking our favorite things from the 4th of July and using them again this weekend, because why reinvent the wheel?

There is no better way to start the morning than with some red, white and blue pancakes & bacon.  Just use your favorite pancake recipe, divide in half, add some red food coloring to part and blue food coloring to the rest. Top with whipped cream & berries. 


And when it's "5 o'clock somewhere" whip us these  blueberry mojitos.  To make them extra festive, throw some sparklers in 'em! I'll be making a virgin version of this for myself this year, extra berries please!

Spring Break: San Diego

Well friends, I survived my first day back at work after Spring Break and a long weekend in San Diego. Knowing that there's only 4 more weeks of school really helped too!

San Diego, here we come!

Thursday, Erik & I left for my favorite place on Earth, San Diego! The weather was absolutely perfect when we arrived and we stopped in Ocean Beach for some fish tacos (no photos of the tacos exist-I ate them way too fast).


We spent the rest of the afternoon lounging at our hotel pool... which overlooked the beach. (it was a little too chilly for my Arizona blood to be hangin' at the beach).



The next day we took a stroll down the boardwalk and checked to see if our summer beach house still existed. 

It did.


I made friends with a dog.

Then we met up with some of Erik's friends for some "drinks" at the bar.  I put drinks in quotes because the only drink I was having was water.  And a lot of it.  Which lead to 34839020349 trips to the bathroom.

Saturday, I met up with my friend Kate for brunch, then Erik & I headed off to a BBQ.  The couple hosting the BBQ had an 8 month old son who I was quite excited to meet because that is the age our kid will be at our wedding.  I was very interested to see what a child that age was capable of and what their  demeanor was like.  From what I gathered, they are quite squirmy. 

Before we headed home Sunday, Erik and I got some "coffees" (Mexican hot chocolate for me), strolled down the pier, and ate a delicious breakfast with an ocean view.





It was a great spring break (and as my mom reminded me, my last childless one)!  I'm already looking forward to our next trip to SD in June.

Weekend Recap

You know it's gonna be a great weekend when it starts with a Chikfila oreo milkshake! This weekend, Erik & I headed up to Scottsdale to visit some friends and family and on our way there, I had the absolutely brilliant idea to stop at Chikfila.  (Bonus genius points--it was Friday! I seem to only have Chikfila cravings on Sundays when, of course, they're closed. Does this happen to anyone else?!)

So we got into town Friday night, met up with some friends for sushi and ended the night playing Pictionary.

On Saturday, Erik and his brother played golf and I got to see my college bestie, Kate, who was in town from San Diego.  She was staying at a resort in the area and it was a gorgeous day, so we decided to spend the afternoon laying by the pool.

I had seen my BFF, Sarah the night before and when I saw Kate Saturday afternoon, I officially asked both of them to be in bridal party. 



Sarah, Kate, and the rest of the girls (including myself!) absolutely loved the adorable labels I found on Etsy at the ClassicWeddingDesign shop.

Saturday night, we BBQ'd at my parents house and watched UofA lose against Wisconsin (womp womp).  We had Kobe with us at my parents, Erik's brother and girlfriend brought their dog, and my sister brought her new puppy to join in the festivities, too.

There's a reason Kobe isn't in these photos.  One dog, he can handle, more than that, he gets real awkward.  He's the dog you can find at the dog park sniffing the patch of grass as far away from the other dogs as he can get. Poor Kobs. 

And since we started this mini roadtrip with some delicious food, why not end it the same way?! On our way back to Tucson, we stopped at our favorite drive-thru breakfast place and I picked up this bad boy: eggs, tomato, bacon & pesto on a warm croissant.


This weekend was fabulous, so I have a hard time saying this was the highlight but I'm pretty excited about the newest addition to our home.  My aunt & uncle purchased this for us as an engagement gift.  And what home is truly complete without a bar car?!
