10 on Tuesday | Foods I Eat [Almost] Everyday

Hey, hi, hello! It's time for 10 on Tuesday and I'm on Spring Break! Woop! Woop! 
I pretty much eat the same foods almost every single day (which is not as boring as it sounds, I swear!) and heeeeere they are! 

O N E | Avocado. I can eat avocado plain, but my absolute favorite is avocado toast. I would love to open a food truck that sells fresh juice, with avocado toast on the side--there is just so much you can to with avo toast!! (do you see my passion obsession here?!).

[avocado + tomato + goat cheese]

T W O | Apple cider vinegar. (+ elderberry syrup + lemon).  AKA the "breakfast shot." This would also be included at my food truck. Hello, I need to get this thing rolling (pun intended). Every morning I mix together a tbsp of ACV, a tsp of elderberry syrup and a splash of lemon juice and water, and I never get sick. Promise!  

T H R E E | Oatmeal. My favorite way to eat oatmeal is with a dash of sea salt and extra virgin olive oil. If you think oatmeal is boring, try it with some evoo and you will change your mind. 

F O U R | Eggs. During the week, I'll eat them hard boiled as a quick breakfast or morning snack. On the weekend, Erik makes us bomblettes (bomb omlettes). 

F I V E | Bananas. I'm not the biggest fruit fan, but bananas are my fav because they're not too sweet and go wonderfully with my next favorite food...

S I X | Peanut Butter!! I basically survived on peanut butter while I was pregnant with Sofia, and just recently let her try it for the first time. Can't say I was too surprised with how much she loved it!

S E V E N | Hummus + Veggies. This is the perfect afternoon snack. A little bit of protein, salt, and crunch.

E I G H T | Cheese Sticks. Another one of my favorite snacks. And who doesn't love a cheese stick?! (or two). 

N I N E | Lean protein. Chicken, ground turkey, salmon. We eat one of those with some veggies for dinner every night. Unless it's pizza night, of course. 

T E N | Wine. Because it's usually necessary. And have you seen all the studies about the benefits of red wine?! ;)

My favorite thing to eat for breakfast is oatmeal. But as I sat watching the Today show, I thought my standard EVOO & sea salt oatmeal needed a face-lift. So I strolled out to the kitchen (yes, I was strolling) and thought about how I could execute an oatmeal revamp. Then it hit me. I've been wanting to make chocolate chip banana bread for awhile, and can't give you a reason why it hasn't been made other than I'm lazy. So why not make the lazy girl's chocolate chip banana bread?!
I cooked up the oatmeal, added some sea salt & cinnamon, mashed up a banana, and topped that all off with chocolate chips. 


I was already halfway done eating it when I thought it was good enough to share, so this isn't the greatest picture, but you get the point. And you know what, they say, breakfast is the most important meal of the day ;)

A few weekends ago, Erik bought us me a blender.  Literally, I cannot believe I've lived years (basically since I lived with my parents in high school) without a blender in my life.  But now, I can't remember a time without it.  I spend my free time scouring Pinterest for new & delicious smoothie recipes and think back to my days working at Jamba Juice trying to come up with the best concoctions.

So on this sunny Spring Sunday, I bring you my two most recent faves...


Berry Banana Peanut Butter
1/2 cup almond milk
1/4 cup oatmeal 
I always add these two ingredients first and let them sit for a few minutes, so the oatmeal can absorb some of the milk
1/3 cup frozen blueberries
1/3 cup frozen strawberries
1/2 frozen banana
1 tbsp peanut butter



Oatmeal Cookie Smoothie
1/2 cup almond milk
1/4 cup oatmeal 
I always add these two ingredients first and let them sit for a few minutes, so the oatmeal can absorb some of the milk
1 frozen banana, sliced
1 tbsp honey
1/2 tsp vanilla extract
Pinch of cinnamon, nutmeg, ground ginger & salt

Weekend Recap: Double Dose

Hola amigos! Although I've been M.I.A on the blog front, the past two weekends have been jam-packed with fun, food, and wine so I'd thought I'd catch y'all up with a double dose of a weekend recap.

First up, Labor Day! Erik and I went to visit our family and friends in the Phoenix area and it was a blast! 

I started off by introducing everyone to my Oh My Guac! It's a Margarita! concoction.


 Yes, I know. Those are Italian flags in a marg. But sometimes ya gotta work with what ya have.

Then it was fantasy draft time!


 I'm really, really excited for this.

Started the next day, the best way, with some banana pancakes.


And what else is there to do after stuffing yourself with banana pancakes but head to the pool...





...and wash them all down with a bowl of cherry-lime something...


...and more food. (#dietstartsnever)

This weekend was also nothing short of exciting, as my BFF came to Tucson for a surprise visit!!


So naturally, we went wine tasting. 


Sunday, Erik & I bought a grill. (And have grilled the 2 nights since. Obsessed.)

 Here I am supervising the grill's assembly. Kobe has the same idea.

Aaaaaaaand TA-DA! She's a beaut.

Yes, we moved her outside.

And to top my weekend off, my fantasy team won! So I had to celebrate a 'lil :)

There is only one way to cook/eat/enjoy scrambled eggs and that's low & slow.  I seriously didn't even like scrambled eggs until I discovered this newfangled way to make them. (just kidding, I'm sure people have been doing this since the stone age. maybe.)

OKAY. Back to the eggs. This takes some time and patience and focus, but oh, it is so worth it.

Set your burner on low and add more butter than you think necessary to the pan and let it melt.
I'm realizing now melted butter isn't captured well on camera......

Whisk your eggs up with some cream.
Okay, a lot of cream.......

Add your eggs to the pan and watch the magic happen

Remember. This takes time. When the eggs have almost reached perfection (i.e. when they're almost done) you'll need to tend to them often. Move them around constantly with a spatula or they'll get too "done" and dry and all your hard work will fly right out the window. (Oh & yeah, if drier scrambled eggs are your thing, low & slow probably isn't for you).

Serve with some bacon

And bloody marys


And BAM! That's Saturday morning.
